Fresh juice and prepared dishes with light protein (eggs, fish, chicken), plus an array of grains, legumes and vegetables.

7pm Merienda (Supper):

- MEAL FORMAT: Meals throughout the day are a self-serve buffet, except supper, which is served at the dinner table – this is a great time for all of us to gather, talk about how the residency is going, and make any important announcements.
- SPECIAL DIETS: We do our best in accommodating vegetarian, vegan and gluten-free diets, with organic and wholesome, balanced meals, but please be aware that specialty food items are not available in Mexico (such as gluten-free bread, nut butters, and dairy-free milks). If you require them in your diet, please bring them with you.
- LIVING QUARTERS: As you know from the time you applied, most of our facilities are shared among residents. We are aware that most people will prefer private quarters for sleeping and working. However, we have limited availability, so please, only request private quarters if it’s absolutely necessary (due to unusual sleeping patterns, health issues, etc). We appreciate your adaptability!
